Regulations and opinions regarding introductory flights

I seem to remember having seen a reg that says a flight instructor must make a logbook entry for instruction given. I can't find anything to that effect now. I see in 61.51(h) how flight training time received should be logged, but nothing about how to log flight training given. 

The reason I ask is I may have multiple people who are interested in introductory flights. Many of them won't financially be able to continue flight instruction at this time, but do have some interest in flying (they are aircraft mechanic students). For this to be legal without a letter of authorization, the time would need to be dual instruction and NOT just sightseeing or pleasure rides. Of course, it would be an extra bother to make everyone buy logbooks only to make one entry, hence my question. Any recommendations?

    The regulation you are looking for is 61.189

    Although a logbook may not be a big deal for you, it can be a source of pride and a big deal for a prospective pilot. I would recommend you give each of your prospective students the following (buy a bunch of them).

    Sec. 61.189 Flight instructor records.

    (a) A flight instructor must sign the logbook of each person to whom that instructor has given flight training or ground training.
    (b) A flight instructor must maintain a record in a logbook or a separate document that contains the following:
    (1) The name of each person whose logbook or student pilot certificate that instructor has endorsed for solo flight privileges, and the date of the endorsement; and
    (2) The name of each person that instructor has endorsed for a knowledge test or practical test, and the record shall also indicate the kind of test, the date, and the results.
    (c) Each flight instructor must retain the records required by this section for at least 3 years.

    I created a single page logbook for when I do intro flights. Printed on legal size card stock with my name and training logo. Room for an additional 5 or 6 flights. No “bother” at all.
