While acting as a CFII for my instrument student in an FTD, can I log simulated instrument time as well as him?

No, a FTD is not an aircraft and is not operating in actual instrument flight conditions. Quotes from 61.51 follow:

“A certificated flight instructor may log pilot in command flight time for all flight time while serving as the authorized instructor in an operation if the instructor is rated to act as pilot in command of that aircraft.”

“An authorized instructor may log instrument time when conducting instrument flight instruction in actual instrument flight conditions.”

There is a FAA General Counsel opinion that states that approaches in actual conditions performed by the student can be counted by the CFII as an approach towards meeting their own currency requirements.
