How do I correctly log Instrument time as an SIC rated pilot?

I hold an FAA SE/ME CPL and an ICAO CPL DC-9 SIC type rating. I currently fly as a First Officer for an airline in South America. I have asked a few people this question and have gotten various answers. What I would like to know is if while the Captain(PIC) is acting as the sole manipulator of the flight controls do I also log instrument time? Or can I only log flight time while I am the sole manipulator of the flight controls?

    For the impatient, the answer is yes, you can log instrument time and SIC flight time. But you cannot log instrument approaches unless you are the sole manipulator of controls

    Thanks guys! I really appreciate the information! Now another question that I forgot to ask the first time. The take offs and landings are the same idea of the instrument approaches correct? Unless you are the sole manipulator of the flight controls you can’t log the take offs and landings?
